Recipe | Pineapple-Serrano Margaritas

Now that we’re getting closer to those signature hot summer days, I can’t think of any snack more refreshing than freshly cut pineapple, pulled straight from the fridge so it’s still cold.

Seriously, though — other than maybe watermelon, pineapple screams summer refresher more than any other fruit out there. So next time you’re beach-bound or picnic-bound or rooftop-bound, whip up this take on a classic margarita that’s unbelievably tangy, punchy and zingy.

Pineapple-Serrano Margaritas (serves 4)

12 ounces Hornitos® Plata tequila
12 ounces serrano simple syrup
12 ounces fresh lime juice
1 pineapple, cored and pureed
ice
lime and pineapple slices for garnish

For the serrano simple syrup, halve two medium serrano peppers and add (including seeds) to three cups water plus 2 cups sugar. Bring to a simmer as sugar dissolves. Remove from stove and chill in the fridge. Strain peppers out before using.

In a large pitcher, add tequila, simple syrup, lime juice, and pineapple puree. Stir to combine and adjust to your taste. Drink over ice immediately or pour into a cooler and head out for a picnic or beach trip!

Pro Tip: Chill your pitcher of margaritas for an hour or two before heading out for the day and then pour it into a Swell bottle to take with you. The thing keeps things cold FOREVER.
