A Rooftop Sunset with Margaritas and Ceviche

One of the things I miss most about my previous apartment in DC is the rooftop, complete with patio seating and incredible views. But our Baltimore rooftop has a lot of things going for it, too — even if it’s a little slanted and you have to climb up a steep ladder to get there and it’s not really for rooftop lounging at all. I don’t care about all that, because it’s secluded and it has a great view. I’ll take it.

Now that the weather’s been consistently great (we’re just going to ignore the pollen situation, ok?), I’ve been craving rooftop time more and more. Saturday afternoons are spent catching some sun and reading; and sunsets are spent with cocktails (in this case, margs) in hand. Who ever said weeknights have to be boring?

This is how summer is meant to be enjoyed.

Lemongrass Ginger Margaritas (quantities per cocktail)

2 shots Hornitos® Plata Tequila
2 shots fresh lime juice
1 1/2 shots lemongrass ginger simple syrup

For the simple syrup, dissolve 1/2 cup sugar in 1 cup water over medium heat. Add 2 small stalks lemongrass and a 1-inch piece of ginger and simmer briefly. Turn off heat and refrigerate whole mixture until chilled. Strain lemongrass and ginger out before using.

Pour tequila, lime juice, and simple syrup in a cocktail shaker filled with ice. Shake until ice-cold and pour over more ice. Rim glass with salt if desired and serve with extra slices of lime.

Mango Shrimp Ceviche

1 pound fresh shrimp, peeled and deveined
1 jalapeño, seeded and minced
1 red bell pepper, chopped
1/2 red onion, chopped
1 mango, halved, pitted, and chopped
1 avocado, halved, pitted, and chopped
1 cup fresh lime juice
1-2 tablespoons Hornitos® Plata tequila
salt to taste

To prepare, cut shrimp into 2-3 pieces each and put in a bowl with lime juice and tequila. Refrigerate shrimp for up to one hour, until the citrus “cooks” the shrimp to a light pink. About halfway through that one-hour period, add jalapeño, bell pepper, and onion. Add mango, avocado, and a pinch of salt right before serving. Serve with tortilla chips.
