Summer Grilling Recipes: Grilled Watermelon & Tomatoes

This summer grilling recipe is so easy, I’m not even sure we should really call it a recipe. Let’s just call it an assembly of some of the best things about this time of year. I had never grilled tomatoes or watermelon before, so it was definitely an experiment in seeing how they held up to the grill, but I think the happy results are proof enough. Happy weekend, everyone!

Grilled Watermelon and Heirloom Tomatoes with Mozzarella & Balsamic

1 watermelon, cut into 1-inch slices and then cut into circles or squares as you see fit
4 heirloom tomatoes, cut into hefty 1/2-inch slices
1 bunch basil
2 balls mozzarella, cut into 1/4-inch slices
3 tablespoons balsamic vinegar — you can use syrup for extra pungency if you want

So like I said, this can barely be called a recipe: Heat grill to medium-high heat and brush generously with olive oil. Rest watermelon slices on the grill for about 4 minutes. Add tomato slices and grill both another 2 minutes or so. Flip and let sear for just about 2 minutes or so and then assemble with mozzarella and your fresh balsamic and basil. Grilling. Recipe. Done.

      I got them at Whole Foods — I wasn’t sure if they would have any this early in the season but they do and they’re delishhh!

      Do it do it! I was curious about whether the flavors would go well together, but the watermelon and tomatoes were surprisingly complementary!
